How does Pirate Shellfish ensure the
highest quality product?  We grow them
ourseslves!  Pirate Shellfish owns and
operates a three acre Shellfish farm in
Wellfleet, MA., home of the Worlds most
famous oysters.  
The life of a farmed oyster
It all begins in a shellfish hatchery, where adult stock oysters are induced into
spawning.  The millions of microscopic oysters that are released into the hatchery
are carefully collected and grown to a size suitable for distribution.  This is when
Pirate Shellfish and other oyster growers buy the "seed" or baby oysters.  The seed
is placed in grow-out bags, typically made of polypropylene.  As the oysters grow
throughout the summer months they are divided into more and more bags.  The
bags sit about 18" off of the bottom secured on metal racks.  A farmed oyster most
likely will reach legal size, 3", in about two growing seasons.  As they reach 3" they
are harvested and sold.
